Matanzas on the Bay and Petey’s Upper Deck welcome Tony Coppolino as the new general manager for the restaurants. Originally from Rhode Island, Coppolino brings 15 years of experience in the restaurant management industry, with a strong background in culinary, bar and service management. Prior to joining the team at Matanzas on the Bay, Coppolino most recently served as general manager with Buca di Beppo in Orlando and Naples. His experience includes a number of reputable, high-volume casual dining companies, including Planet Hollywood, Olive Garden and Miller’s Ale House. He earned an associate’s degree in Business Management from Community College of Rhode Island in Rhode Island, and an associate’s degree in Drafting and Design Technology from Edison State College (now Florida SouthWestern State College).
